Catherine Zaben – The Perfect Blend

Catherine Zaben is a first generation Colombian American who happened to fall in love with a first Generation Palestinian American. Which happens to be a distant cousin of mine. In my village Catherine is a Unicorn. With her big heart and warm soul she’s managed to steal the hearts of not only one, her now husband, but everyone she encounters from my village.

11 years ago Catherine was diagnosed with an autoimmune disorder called Hashimoto’s Thyroiditis. This disorder was a blessing in disguise since it lead her to study Holistic Nutrition. Today, Catherine is a health coach who is certified in plant based nutrition and advanced herbalism. She launched her business, Eat Pretty Nutrition, early last year and has been helping people from all around the world with her holistic meals and detox tea recipes.

In this episode, Cathrine talks about her Colombian heritage and her childhood growing up with a Jehovah’s witness mom and a catholic dad in Bogota, Colombia. She shares the beginning of her love story and how it was like most, not a fairy tale. Catherine also talks to us about the source of  her love for food and how it’s inspired by her Colombian-Palestinian Culture.
